Resumo
In the knowledge age one of the problematic ones faced by corporations is related to the loss of knowledge assets, occured for its inefficacious management or due to organizational processes inexistence destined toward the identification and mapping of existing the tacit and explicit knowledge. The present work presents a case study of identification process of the organizational knowledge in a small company who operate in the bread branch, characterized for the high turn-over index and operational tasks execution out of standard. This research looks for to demonstrate in practical way the development of the organizacional knowledge identification process, as form to support the production activities through application of business models processes techniques, knowledge topographies for its presentation to the employees under training and recycling form, focus on minimze this problems. In relation of methodology used, in accordance with research types defined by Vergara (1997), the developed work was characterized preponderantly as an applied research, and as a case study. It is a work startet with data collection based on interviews and organizational routine comments. As gotten results, it was obtained a map of knowledge necessities so that other people who enter in the company can use the best techniques developed for the professionals who had worked there
